Red Yeast Rice as pigment also called Red Kojic rice, Red Fermented Rice is obtained form monascus by using solid fermentation the rice as raw material. It has striking color, light and heat stability, wide PH plying scope, purity and safety. It can be used as a natural colorant. It also conforms to national standard, numbered GB4926-2008.

Characteristics:
1. Red kojic rice powder can't dissolve in water .
2. Coloring properties are outstanding. In particular, affinity for protein is excellent.
3. Rather stable in heat but unstable in direct sunlight.
4. A food color which is stable for such metal ions as Ca++, MG++, Fe++, and Cu++.
